Which USDA food categories carry the most sodium per 100 g, computed live across 7,515 SR Legacy reference foods. Soups, sauces, and gravies lead by a wide margin.

Research question

The Dietary Guidelines for Americans cap sodium at 2,300 mg per day for adults, yet most people in the United States take in closer to 3,400 mg. Where does that sodium concentrate? We ranked every USDA SR Legacy food category by its average sodium per 100 grams to see which aisles of the grocery store carry the heaviest load before any salt is added at the table.

Methodology

We restricted the sample to SR Legacy reference foods, the USDA's curated set of standard generic items, rather than the much larger branded catalog, because reference foods give a cleaner per-category baseline that is not skewed by how many flavours of one product a manufacturer happens to submit. For each food category we computed the mean sodium per 100 g across all foods with a recorded, non-zero sodium value, keeping only categories with at least 50 qualifying foods so a handful of cured outliers cannot define a whole aisle. Why soups, sauces, and gravies lead

Soups, Sauces, and Gravies top the table at roughly 1,255 mg per 100 g, and the reason is structural rather than incidental. Salt does three jobs at once in these products: it carries flavour in a watery base that would otherwise taste flat, it suppresses bitterness from concentrated tomato, bouillon, or roux, and it acts as a preservative that lets a shelf-stable can sit for years. A single 245 g cup of canned soup can therefore deliver well over half a day's sodium allowance in one bowl, before any bread or crackers are added alongside it.

Baked and processed-meat categories cluster behind the leader for a different reason. In bread, sodium is a functional ingredient, not just a seasoning: it controls yeast fermentation, strengthens gluten, and sets the crumb, so even a loaf that tastes mild can carry a surprising amount. Cured and smoked meats use salt as the curing agent itself, which is why a slice of ham or a few rashers of bacon push pork products high up the list. None of these foods taste as salty as the numbers suggest, and that mismatch between perceived saltiness and measured sodium is exactly what makes label reading useful.

It is worth separating two ways of looking at sodium. Per 100 g ranks foods by concentration, which is what the table above shows. Per calorie tells a complementary story: a low-calorie broth can be sodium-dense per gram yet contribute few calories, while a calorie-dense baked good spreads its sodium across more energy. Both views matter at the shopping shelf, because a food eaten in large volume by weight (soup, sauce) behaves differently from one eaten in small dense portions (a cracker, a slice of cured meat). The categories that combine high concentration with large typical serving sizes are the ones most worth watching.

A few specific items illustrate how uneven the picture is within these aisles. Cured staples like prosciutto, salami, bacon, anchovies, capers, olives, and dill pickles concentrate enormous amounts of salt relative to their weight, since brining and dry-curing are preservation methods that depend on it. Condiments compound the effect quietly: soy sauce, fish sauce, miso, bouillon cubes, gravy granules, ketchup, and salad dressings often deliver a substantial dose in a single spoonful that nobody weighs. Bread and bakery items hide their contribution in plain sight, because a sandwich built from two unremarkable slices can rival a portion of crisps before the filling is added. Against those, fresh produce, plain grains like oats and brown rice, unsalted nuts, and most fruit sit near zero, which is why dishes assembled from raw ingredients give a cook the most control. What this means at the shelf

The practical takeaway is not to avoid whole categories but to read within them. What this analysis cannot tell us

Category averages describe the middle of a distribution, not any single product, and the spread within a category is often wider than the gap between categories. SR Legacy values reflect generic reference foods as prepared in USDA's standard descriptions, so a home recipe or a specific brand can land far from the average. The figures count sodium as recorded in the database and do not capture salt added during cooking or at the table, which can rival the amount already in the food. This is a descriptive look at where sodium concentrates, not dietary advice; sodium needs vary with health status, and people managing blood pressure should follow guidance from a clinician.
